Everything You Need to Know About Synthetic Food Dyes
By Dr. Rebecca Bevans and Dr. Lorne Hofseth

What if the bright, cheerful colors in your favorite snacks were doing more than making them look tasty? What if they were silently harming your health—and your children’s future?

In this eye-opening and urgently needed book, two scientists and professors—Dr. Bevans and Dr. Hofseth—pull back the curtain on a hidden public health crisis: synthetic food dyes. Backed by over a decade of research, they deliver a clear, accessible, and often shocking exploration of the dyes saturating ultra-processed foods, from breakfast cereals to candy to children’s vitamins.

It all began with two moments that changed their lives. For Dr. Bevans, it was the haunting words of her young son: “Mom, get me a knife… I just want to die.” For Dr. Hofseth, it was the discovery of dead mice after a simple experiment feeding Red 40 to pregnant mice. These disturbing experiences sparked an unrelenting scientific journey—one that led to discoveries too important to ignore.

Through ten riveting chapters, Bevans and Hofseth translate cutting-edge science into everyday terms, explaining how synthetic food dyes—found in nearly every aisle of the grocery store—can trigger short-term reactions like hyperactivity, allergic responses, and behavioral issues, especially in children. More alarmingly, they reveal how long-term, low-grade inflammation caused by these dyes may quietly fuel chronic diseases such as obesity, immune dysfunction, and even cancer.

What You’ll Discover:

A chapter-by-chapter breakdown of each FDA-approved synthetic food dye—and what science says about its safety.
The political and historical forces that have kept these dyes in the U.S. food supply, including the little-known Delaney Clause.
The most up-to-date global policies, including the 2025 bans of Red 3 in the U.S. and petroleum-based dyes in West Virginia.
How the FDA plans to phase out six major dyes—and what that means for your family.
Plus simple, practical steps to remove synthetic dyes from your life, without losing your sanity or your favorite foods.

Come join Dr. Bevans and Dr. Hofseth as they explain why synthetic food dyes are better left off your plate.

Dr. Rebecca Bevans is a cognitive neuroscientist and Professor of Psychology at Western Nevada College. She holds a Ph.D. in cognitive neuroscience and a master’s in child development from the University of Nevada, Reno. Her deep dive into synthetic food dyes began as a personal effort to help her son and grew into a national platform. She has since delivered a TEDx talk, appeared on numerous podcasts and radio shows, and was featured in To Dye For: The Documentary. With her students, she has researched the presence of synthetic dyes in everyday products and continues to collaborate with scientists around the world—combining rigorous research with a parent’s passion for change.

Dr. Lorne Hofseth is a cancer researcher with over 30 years of experience studying how chronic inflammation and environmental toxins contribute to disease. He is a Professor and Associate Dean for Research at the University of South Carolina College of Pharmacy and Director of the Center for Colon Cancer Research. Originally from Coquitlam, British Columbia, he earned his Ph.D. from Simon Fraser University before continuing his research at Michigan State University and the National Cancer Institute. Since 2004, Dr. Hofseth has led a team focused on how to prevent inflammation-driven diseases. He is also a proud father of three daughters – Jenna, Reagan, and Tance.
